100% Malbec from hand-harvested grapes in the second half of March. Maceration for 3 days at low temperature with CO₂ and 30% whole berries. Alcoholic fermentation in stainless steel tanks with selected enzymes and yeasts. Aging on lees in stainless steel tanks and third-use oak until stabilization and final blending. Naturally stabilized wine, bottled unfiltered.
Pioneering winery of Argentine Patagonia, founded in 1998 by the Schroeder family in San Patricio del Chañar, Neuquén. One of the first to demonstrate the winemaking potential of Patagonia as a high-altitude region. The name Saurus is a tribute to dinosaur fossils found in the region during the installation of the vineyards. Its extreme terroir—very cold nights, strong diurnal temperature amplitude, and well-drained sandy soils—defines the wines of high freshness and intense fruity profile that characterize them.
